Arbois, Jura, France

From the Tissot family estate in Arbois, where winemaking heritage spans generations. The same limestone soils and continental climate that produce legendary Vin Jaune now inspire a new tradition.

02 / Process

Spontaneous Fermentation

No cultured yeast. No temperature control. Wild microflora from the estate cellars inoculate each batch, creating complexity that cannot be replicated or rushed.

03 / Elevage

Oak Barrel Aging

Aged 6 to 8 months in oak barrels from the Tissot wine estate. Each barrel imparts unique character from its previous life holding Chardonnay, Trousseau, or the legendary Vin Jaune.
